    Sue's Slices Of Lemon Pie

    I remember the very first time I ever made this pie, it was at the restaurant, and when I put it out, it sold out in 20 mins., and people would call to see when we would be making it, so we put it on the menu. If you love lemon, this is the pie for you.

    List of Ingredients

    2 dough for a 2 crust pie, with 2 tsp. lemon zest added to the crust

    Filling:
    2 c. sugar
    1/3 c. all purpose flour
    1/4 tsp. salt
    3/3 c. water
    2 T. butter, softened
    2 tsp. grated orange zest
    2 tsp. grated lemon zest
    3 eggs
    2 lemons, peeled, sliced(make sure you don't leave the white pith on) 1/8" thick

    Recipe

    Prepare the pie crust, adding an additional 2 tsp. lemon zest to the flour.

    Heat oven to 400.

    In lg. bowl, combine sugar, flour, and salt. Mix well. Add water, margarine, orange and lemon peel and eggs. beat until well blended.

    Stir in lemon slices. Pour into crust lined pie pan.

    Top with second crust; seal edges, and flute. Sprinkle with about 2 T. sugar, and cut slits in top of pie, in several places.

    Bake for 40-45 mins, or until golden brown. Cool 1 hr. or until completely cooled.

    Store in fridge.
