    2 1/4 c. flour
    1/2 tsp. salt
    2 tsp. ground cinnamon
    1/4 tsp. ginger
    1 c. packed brown sugar
    3/4 c. granulated sugar
    3/4 c. corn oil
    1 c. chopped pecans
    1 tsp. baking soda
    1 tsp. baking powder
    1 egg, beaten
    1 c. buttermilk

    Recipe



    Preheat oven to 350.

    Liberally grease a 9x13" baking pan.

    Combine the flour, salt, 1 tsp. of the cinnamon, the ginger, both sugars, and the corn oil in a lg. bowl, and mix well.

    Remove 3/4 c. of this mixture to a smaller bowl and add to it the nuts and remaining cinnamon. Mix well.

    To the mixture in the lg. bowl, add the baking soda, baking powder, egg and buttermilk. Stir to combine (small lumps in the batter are OK).

    Pour batter into prepared pan. Sprinkle flour-nut mixture over the top.

    Bake for 40-45 mins., or until cake tests done (a cake tester inserted in the middle will come out clean). Serve warm.

    Makes 12 servings
