List of Ingredients 1 5 oz. salmon fillets 4 tsp. Dijon mustard 4 tsp. honey 1/3 c. dried potato buds 4 tsp. olive oil Recipe Pat the salmon fillet with a paper towel, to remove excess moisture. Make a paste with the honey, and the mustard. Smear the paste on top of the salmon. Place the potato buds in a plate, then press the top of the salmon into the buds, to form a crust. Heat a Teflon skillet with olive oil, over med. heat. Saute the potato crust of the salmon in the skillet, until the crust is golden brown. Place the salmon in a Pyrex dish lined with aluminum foil, and finish in a preheated 350 oven. Makes 4 servings
