Recipe Introduction
Lots of people do not heat the ingredients before making their pasta salad, and it is usually pretty bland. Heating them brings out the flavor of the herbs, and makes the salad pop.
If your planning other salads, I'd figure the 1/2 c. portion to be enough, so you don't end up with tons left.
I make it like this all the time, and its awesome. Only takes a few mins. to make it, even lg. batch. You can add or omit any of the vegetables, nuts, or even add Cheddar cheese.
List of Ingredients
1/1/2 c. Italian salad dressing
2 T. olive oil
1 c. packed fresh basil leaves
2 T. Parmesan cheese, grated
2 T. walnuts, chopped
1 T. minced garlic
2 c. fresh mushrooms, quartered
1 c. broccoli flowerettes
1 c. cauliflowerettes
1 med. onion, julienned
1 small green bell pepper, julienned
1 small zucchini, sliced
3 julienned carrots
1 14 oz. can water packed artichoke hearts, drained and quartered
6 c. cooked bow tie pasta
Recipe
In a blender or food processor, combine the first six ingredients. Process until smooth.
Pour 1/2 c. into a lg. skillet. Saute all of the vegetables until crisp-tender, about 3-5 mins. Add pasta and remaining dressing, and chill over night is preferable, so it
marinates well.
Makes 20 1 c. servings, or 40 1/2 c. servings
