Cheese Sauce (for broccoli or whatever!)

Recipe Introduction
This recipe starts with a basic white sauce, and is excellent for broccoli or any other vegetable, or even macaroni and cheese.
List of Ingredients
1/4 c. (4 T.) flour
1/4 c. (4 T.)butter
1/2 tsp. dry mustard, if you don't have it leave it out
2 c. milk, skim, whole or anything in between
salt and pepper, to taste
1-2 c. shredded cheese (Cheddar, Swiss, etc.) DON'T use pre-shredded cheese. It's coated with something to prevent clumping and that inhibits its smooth melting quality.
Recipe
Melt butter in saucepan. Stir in flour and mustard.
Cook for 2-3 mins., but do not brown.
Slowly stir in milk, and bring to boil, over med-high heat.
Lower heat, and continue cooking and stirring for 2 mins.
Stir in cheese, salt, and pepper, until cheese is melted and sauce is smooth.
Pour over veggies.
