    This is good over chicken, also.

    List of Ingredients




    Sue's Champagne Sauce For Salmon, Or Almost Any Fish

    Saute in 1 T. unsalted butter
    3 T. shallots, minced finely
    1/4 c. dry champagne, or white wine
    4 T. chicken broth
    1 T. lemon juice
    2 T. heavy cream
    1/2 c. butter, unsalted
    2 T. chopped fresh chives
    salt to taste

    Recipe



    In a small saucepan over med. heat, saute shallots in 1 T. butter, until soft.

    Add champagne, broth and lemon juice. Simmer until reduced by half, about 5-7 mins.

    Reduce heat and stir in heavy cream. Whisk in cold butter stirring constantly. Add butter one piece at a time, adding next one, only after last piece is incorporated well.

    You can strain the sauce through a fine mesh strainer.

    Stir in chopped chives, and salt to your preference.

    Serve over fish.

    Garnish with a light sprinkle of paprika, and parsley.
