    2-3 med-sized ducks
    1 lb. hot smoked sausage, cut into 1/4" slices
    1/3 c. oil
    3/4 c. flour
    1 c. chopped onion
    1/2 c. chopped green pepper
    1/2 c. sliced celery
    1 qt. hot water
    1 qt.chicken stock
    3 cloves garlic,, minced
    2 bay leaves
    2 tsp. Tony's More Spice and Less Salt Cajun Seasoning
    1/2 tsp. dried whole thyme
    1 T. Worcestershire sauce
    1 tsp. Tabasco Sauce
    1/2 c. green onions sliced
    hot cooked rice
    gumbo file, optional

    Recipe



    Boil ducks in chicken broth until fully cooked.

    Remove ducks and discard broth. Allow ducks to cool, and debone.

    Brown sausage in a pot, then remove but save dripping in pot.

    Add vegetable oil, and heat over med. heat.

    Add flour to oil, and cook stirring constantly, until the color of chocolate.

    Add onion, bell pepper, and celery. Cook until vegetables are tender.

    Gradually stir in chicken broth and hot water, and bring to a boil.

    Add duck meat, garlic, bay leaves, Cajun seasoning, thyme, Worcestershire and Tabasco.

    Reduce heat and simmer, uncovered for about 1 hr.

    Add sausage, and continue cooking, uncovered for an additional 30 mins.

    Serve over rice and add file, if desired.

    Note:
    If using store bought ducks, save the broth they are cooked in for the gumbo.
