Johnny's Smothered Potatoes

This recipe is great for a crowd, and may be cut in half for fewer people.
List of Ingredients
2 lbs. smoked sausage
15 c. chopped onions
3 T. Tony Chachere's More Spice And Less Salt seasoning
2 T. garlic powder
2 T. Worcestershire sauce
10 lbs. potato's, diced
1/2 c. chopped parsley
8 c. water
Recipe
Slice sausage, and then quarter. Combine sausage and onions in lg. black iron pot.
Add Tony Chachere's, garlic powder, and Worcestershire sauce. Brown until onions are a golden brown (you may need to deglaze the bottom of the pot a couple times. Use a couple ounces of beer. If you don't have a beer, then use some water.)
Add diced potatoes, and 8 c. of water. Cook over med. heat until done. Add parsley.
Wait 10 mins., then serve.
