What To Do With Asparagus
I have frozen asparagus many times.
I don't blanch it, just wash it, cut it up, put it in zip-lock bags, and freeze.
When you use it, don't thaw it out, just cook it frozen.
I don't recommend keeping it for a long period of time, it has a tendency to get a strong odor. I usually try to use it up in 4-5 months.
It really doesn't get mushy, although not as firm as when it's fresh.
I always cook asparagus (fresh or frozen) in my microwave steamer.
Put a little water in the bottom, cover, and cook until desired doneness.
You have to stir it halfway thru the cooking.
Cooked in the microwave, it stays crispy, and doesn't get mushy, and fall apart.
After cooking, drain the water, add butter and salt and pepper, then lay slices of American cheese on top.
Put the cover back on, and let it sit for a few mins.
The heat from the hot asparagus melts the cheese.
