Lindas Garlic And Onion Smashed Potatoes

List of Ingredients
4 lbs. red-skinned potatoes, unpeeled, quartered
1/2 c. (1 stick) unsalted butter, cut into pieces
1 c. finely chopped onion
3 T. finely chopped garlic
1 c. sour cream
Recipe
Cook potatoes in a lg. pot of boiling salted water, until tender, about 20 mins. Drain, and return to pot.
Melt 1/4 c. butter in a lg. frying pan, over med. heat. Add onion, and saute until translucent, about 3 mins. Add garlic and saute until tender, about 3 mins.
Add onion-garlic mixture to potatoes. Add sour cream and remaining 1/4 c. butter, and mash coarsely.
Season to taste with salt and pepper, and serve.
Makes 6-8 servings
