Chopped Liver
3 tablespoons butter
1 pound chicken livers, cleaned
1 medium onion, chopped
1/2 teaspoon ground dried thyme
Salt and pepper
3 hard-cooked eggs, roughly chopped
Melt the butter in a skillet and cook the livers and onion until the onion becomes translucent, about 4 minutes. Add the thyme and generous amounts of salt and pepper while cooking. Drain the mixture but reserve any liquid.
Pulse the livers and onion four or five times in a food processor. Add the eggs and pulse again four or five times. Add some of the cooking liquid if needed; you want a smooth spreading consistency but not a paste. Serve with party rye or crackers.
