    Crunchy Chicken

    Football-fans-tested and approved!

    1 medium bag potato chips
    1/4 teaspoon cayenne
    1/4 teaspoon salt
    2 large eggs
    2 pounds boneless skinless chicken breasts or thighs
    1/2 cup sweet chili sauce (store-bought)
    1 cup sour cream
    1/2 cup salsa
    1/2 cup whole-grain mustard

    Preheat oven to 450° F. Spray cookie sheet with oil. Crush half the potato chips finely with a rolling pin and the rest into very small pieces. Stir in cayenne and salt. Whisk eggs together. Wash chicken and cut into 1-1/2 "bite-size" pieces. Dip chicken pieces into egg; firmly press into potato chips and place in one layer on cookie sheet.

    Bake 10 minutes. Put chili sauce in a dipping bowl; divide the sour cream into 2 other bowls. Stir the mustard into one and salsa in the other. Serve with chicken bites.

    Makes about 50 pieces
