Stuffed New Potatoes
Tiny new potatoes
Salt
Freshly ground black pepper
Onion powder
Fontina cheese
Paprika
Chives or green onions
Preheat broiler to 500° F. Cook potatoes in salted water until tender. Cool, cut each in half and with small end of melon baller carefully make a little hollow in each half. Place them on a baking sheet, and liberally sprinkle with salt, pepper and sprinkle with onion powder.
Fill cavities with shredded Fontina cheese and sprinkle with paprika. Broil about 5 minutes until toasty brown. Remove from oven and garnish with fresh chives or minced green onion.
