Double Ginger Loaf
1/2 cup shortening
1/3 cup firmly packed brown sugar
2 eggs
1/2 cup molasses
1 tablespoon finely grated fresh ginger
3 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking soda
1/4 teaspoon ground cloves
1/4 teaspoon salt
1-1/2 cups boiling water
2 tablespoons finely chopped crystallized ginger
Cream shortening and brown sugar for 3 minutes. Add eggs, molasses and grated ginger. Beat well. Sift flour, cinnamon, baking soda, ground cloves and salt. Combine dry mixture and wet mixture alternately with the boiling water, just until mixed.
Transfer to greased 9x4-inch loaf pan. Sprinkle with the crystallized ginger. Bake at 375° F. for 55-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool completely; store tightly wrapped.
