Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 cups all-purpose flour -- sifted
2 cups whole wheat flour -- sifted
1 cup milk
2 tablespoons granulated sugar
1 tablespoon brown sugar
2 tablespoons sorghum
1 teaspoon salt
1/3 cup Wesson oil
1 cup warm water
1 envelope active dry yeast
Mix together both flours; set aside. Combine milk, sugars, sorghum and salt and bring to scalding point; do not boil. Let cool. Measure water into a 3-quart bowl; sprinkle in yeast and stir until dissolved. Add cooled milk mixture and half the flour; beat until smooth. Add rest of flour to make a soft dough. (may need an additional 1/4 cup flour, if dough is too soft.)
Turn out onto floured board and knead until smooth. Place in an oiled bowl and turn so that top is oiled. Let rise until doubled in bulk, about 1-1/4 to 1-1/2 hours.
Punch down; divide in half and shape into 2 loaves. Cover; let rise till doubled in bulk (about 1 hour). Bake at 375 F. about 50 minutes.
Makes 2 loaves
