1 cup cornmeal
1/3 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup onion -- finely chopped
1 egg
1/2 cup buttermilk
1/4 cup oil
Preheat oven to 450 F. Generously grease 8 muffin cups (1/3 cup capacity each).
Combine all ingredients in a medium bowl; mix well. Spoon into muffin cups, filling about 2/3 full. Bake for 15 to 18 minutes. Remove from muffin pan immediately. Serve warm.
Makes 8 muffins

NOTES : These are great with chili or bean soup...or any soup for that matter! Lower in fat than the fried kind.
You can add more onion if you like...I do.
