Italian Casserole Bread

2 cups warm water
1 package active dry yeast
2 teaspoons salt
1 tablespoon sugar
4 cups all-purpose flour -- sifted
Dissolve yeast, salt and sugar in warm water. Stir in flour (dough will be sticky). Let rise until doubled in bulk; stir down and divide dough into two well-greased 1-quart casseroles. Sprinkle salt or garlic salt on tops of dough and let rise to the top of casseroles. Bake 1 hour at 400 F. or until tests done. Do not grease tops when baked and they will stay crusty. An added treat: before first rising, stir in 1/4 cup fresh chopped chives or thinly sliced green onion.

NOTES : This bread is so easy and a real treat with homemade minestrone soup.
