    Peach-Praline Muffins

    1-2/3 cups all-purpose flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup packed brown sugar
    1/2 cup milk
    1/3 cup oil
    1 egg
    1 teaspoon vanilla
    1 cup fresh or frozen peaches, thawed and drained
    1/2 cup chopped pecans

    Topping:
    1/4 cup packed brown sugar
    1/4 cup chopped pecans
    1 tablespoon cold butter or margarine

    In large bowl combine the flour, baking powder, and salt. In another bowl combine the 1/2 cup brown sugar, milk, oil, egg and vanilla. Stir into dry ingredients just enough to moisten. Fold in peaches and 1/2 cup pecans. Fill greased or paper-lined muffin cups 2/3 full.

    Combine Topping ingredients: brown sugar, chopped pecans and cold butter or margarine, until crumbly; sprinkle over batter. Bake at 400° F. for 15 to 18 minutes or until toothpicks comes out clean. Cool 5 minutes before removing from pan to a wire rack.

    Yield: 1 dozen
