Sally's Blueberry Muffins

1 3/4 cups all-purpose flour
2/3 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
6 tablespoons softened butter
1 egg
1/2 cup milk
1 teaspoon lemon zest
1/2 teaspoon vanilla
1 cup fresh blueberriesRecipe
Preheat oven to 400 degrees. Grease 12 cup muffin pan
In a large bowl, mix flour, sugar, baking powder, and salt. With a pastry blender, cut in butter until mix resembles fine crumbs.
In small bowl, beat until blended egg, milk, lemon zest, and vanilla. Stir egg mix into flour mix until moistened. Fold blueberries into batter.
Spoon batter into muffin-pan cups. Bake 20-25 minutes until golden or toothpick comes out clean.
Serve warm!
