    Applesauce Stir Cake

    Amount Measure Ingredient -- Preparation Method

    1 cup sugar
    1 cup margarine -- softened
    1 egg
    1/3 cup molasses
    1 1/2 cups applesauce
    1 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/2 teaspoon allspice
    1/2 teaspoon salt
    1 1/2 cups all-purpose flour
    1/2 cup black walnuts -- chopped
    1/2 cup raisins

    Beat together sugar, margarine and egg. Add molasses and applesauce with the baking soda stirred into the applesauce before adding. Mix well. Blend together spices, salt and flour and add to wet mixture. Fold in black walnuts and raisins. Spread in a 9x13-inch baking pan.
    Bake at 350 F. for 35-40 minutes. Cool and frost with a thin powdered sugar glaze or mocha-flavored icing.

    NOTES : This is an old-fashioned moist cake, reminicent of A&P's Spanish Bar Cake.
