    Easy Upside-Down Pineapple Cake

    Amount Measure Ingredient -- Preparation Method

    9 ounces crushed pineapple
    1/4 cup butter -- softened
    1/2 cup brown sugar -- packed
    2 cups all-purpose flour
    1 cup sugar
    3 teaspoons baking powder
    1 teaspoon salt
    1/2 cup shortening
    1 egg
    1 cup milk
    1 teaspoon vanilla

    Mix together undrained pineapple, butter and brown sugar; spread in bottom of a greased 9x9-inch baking pan. Sift together dry ingredients and place in a bowl; add remaining ingredients and beat 2 minutes with an electric mixer on medium speed.
    Pour the batter over pineapple mixture in pan. Bake in 350 F. for 45 to 50 minutes. Remove from oven; immediately turn cake upside-down onto serving plate. Top with whipped cream or can be served plain.

    Serves 6
