1/2 cup instant potato flakes
1/4 teaspoon salt
1 cup boiling water
2/3 cup butter or margarine
1 cup sugar
4 whole eggs
3 cups self-rising flour
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 cup blackberry jam
1 cup cherry preserves
1 cup candied cherries -- cut up
1 cup candied pineapple -- cut up
2 cups chopped pecans
Heat oven to 325 F. Grease thoroughly a 10-inch tube pan and line bottom with heavy greased paper. Put instant potatoes and salt in a small bowl and stir in boiling water; allow to cool. Cream butter and gradually cream in sugar. Add eggs, one at a time, beating after each addition. Stir in cooled potatoes. Sift spices with flour and blend into creamed mixture. Fold in preserves, fruits and nuts.
Pour batter into prepared pan and bake for 1-1/2 hours. Let cake cool completely in pan.
