Great recipe and another way to use up zucchini!
Lee Motz's Zucchini Pie
2 eggs
3/4 cup sugar
2 cups peeled and grated zucchini
1/2 teaspoon salt
1 cup milk
1 tablespoon vanilla
1 tablespoon cornstarch
Pour everything into a blender and blend well. Pour into an unbaked pie shell. Bake in preheated 450° F. oven 10 to 15 minutes; reduce heat to 350° F. and continue to bake 45 to 60 minutes or until knife inserted in center comes out clean. Cool, and serve with a dollop of Cool Whip.
