2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon white pepper
1/4 teaspoon salt
2/3 cup butter -- softened
2/3 cup sugar
3 eggs
1 teaspoon vanilla
2 teaspoons grated lemon rind
1/3 cup milk
Preheat oven to 350 F. Butter and flour an 8-1/2-inch loaf pan.
In a medium bowl, stir together the flour, baking powder, pepper and salt; set aside.
In a large bowl, cream the butter and sugar. Beat in the eggs, one at a time, then beat in vanilla and lemon rind. Alternating between the two, gradually add the dry ingredients and the milk, beating just until combined. Do not overbeat! Spread the batter evenly in the prepared pan. Rap the pan once or twice on the counter to remove any air pockets.
Bake 40-50 minutes, or until toothpick inserted in center of cake comes out clean and dry. Let cake cool in pan on a rack for 5 minutes, then turn it out onto the rack to cool completely.
Makes one 8-inch loaf

NOTES : You can taste the lemon as soon as you bite into this, the pepper's spark comes as a lively aftertaste! I've used this in catering several times, and always get good reviews.
