    Sweet Potato Custard Pie

    1 unbaked 9-inch pie shell
    2 eggs, slightly beaten
    1/4 c. sugar
    1/2 tsp. salt
    1/4 tsp. nutmeg
    1/4 tsp. cinnamon
    1 tsp. grated orange peel
    1 3/4 c. milk
    2 1/2 c.peeled and grated raw sweet potato, slightly packed
    1 Tbls. melted butter

    Combine eggs, sugar, salt, nutmeg, cinnoman, orange peel and milk. Add
    sweet potatoes, grated right before adding to milk mixture. Stir
    in butter. Pour into pie shell; bake at 400 degrees F for 45-50
    minutes, or until knife inserted 1 inch from edge comes out clean.
    Serve slightly warm or cold.
