White Christmas Pie

List of Ingredients
1 Tbs. Knox gelatin in 1/4 cup cold water
1/2 cup sugar
1/2 tsp. salt
4 Tbs. Flour
1 1/2 cups milk
3/4 tsp. vanilla
1/4 tsp. almond extract
1/2 cup whipping cream, whipped until stiff
3 egg whites
1/4 tsp. cream of tartar
1/2 cup sugar

In a small bowl, soak: 1 Tbs. Knox gelatin in 1/4 cup cold water.
Mix in a saucepan:
1/2 cup sugar
1/2 tsp. salt
4 Tbs. Flour
1 1/2 cups milk
Cook over low heat, stirring until it boils. Boil 1 minute; remove from heat. Stir in the softened gelatin. Cool. When partially set, beat with an egg beater until smooth.
Blend the following into the cooled mixture above:
3/4 tsp. vanilla
1/4 tsp. almond extract
1/2 cup whipping cream, whipped until stiff
In a separate bowl: beat 3 eggs whites; add 1/4 tsp. cream of tartar. Beat until stiff. Beat in 1/2 cup sugar until soft peaks form. Fold this mixture into the mixture above. Then fold in 1 cup coconut. Divide equally.
Pour into two baked pie shells and serve.
