    Jet-Puff Marshmallow Creme - updated 2005
    Lenny's "Updated" Easy Fantasy Fudge

    3/4 cup margarine or butter [ Lenny uses unsalted butter - Land 'O Lakes] - 1-1/2 sticks
    3 cups sugar
    2/3 cup Carnation evaporated milk [only brand he will use]
    12 ounces chocolate semisweet chips
    7 ounce jar Jet-Puff marshmallow creme
    1 cup chopped walnuts or preferred nuts
    1 teaspoon vanilla extract

    Original recipe: Prepare pan or dish (butter it). Mix butter, sugar,and milk in heavy 2-1/2-to-3 quart saucepan; bring it to full boil on medium heat, stirring constantly. Continue boiling 5 minutes on medium heat or candy thermometer reaches 234°, stirring constantly to prevent scorching. Remove from heat. Gradually stir in chocolate chips until melted. Add remaining ingredients; mix well. Pour into prepared pan.
    Cool at room temperature; cut into squares.

    Makes 3 pounds

    Lenny's way: Have buttered pan ready, as well as all the ingredients ready to use as he needs them. Combine butter, sugar, milk and marshmallow creme in heavy saucepan. Bring to a full boil and cook 4 minutes, stirring constantly. Remove from heat, and quickly add the chocolate chips, vanilla and chopped nuts, stirring well to melt chips.
    Quickly pour into prepared dish and let set until cool enough to cut into squares. [This sets up fast, almost as soon as you remove it from the heat so work fast!]

    Chocolate-Cherry Fudge: Add 1 10-ounce jar Maraschino cherries, drained and chopped along with 2 teaspoons cherry extract when you add the chocolate chips and nuts. Continue as in recipe above.

    White Chocolate-Cherry Fudge: Add 1 10-ounce jar Maraschino cherries, drained and chopped along with 2 teaspoons cherry extract when you add the white chocolate chips and chopped walnuts.

    Peanut Butter Fudge: Add 1(12-ounce) package Reeses peanut butter chips in place of chocolate chips along with vanilla extract and chopped nuts, in recipe above.

    Plain White Fudge: Just add white chocolate chips and chopped nuts with vanilla extract.

    Plain Chocolate Fudge: Just add chocolate chips and chopped nuts with vanilla extract.
