Freezer-Fresh Tomato Sauce

3 tablespoons salad oil
4 medium onions -- chopped
3 small cloves garlic
1 peck fresh tomatoes -- peeled and cut into
large pieces
4 cans tomato paste (6-oz. ea.)
1 pound mushrooms -- sliced
1 cup chopped parsley
3 tablespoons sugar
3 tablespoons salt
1 1/2 tablespoons oregano leaves
2 teaspoons basil
2 bay leaves
In large heavy saucepot over medium-high heat, in hot salad oil, cook onions and garlic until onions are tender, about 10 minutes. Discard garlic. Add remaining ingredients; heat to boiling. Reduce heat to low; cover and simmer for at least 2 hours. Discard bay leaves.
Ladle sauce into 1-pint freezer containers, leaving at least 1-inch headspace.
Cover and refrigerate until chilled. Freeze. For safe storage, put a piece of masking tape around the top of lid, joining lid and container, so there will be no spills in the freezer.
Makes about 8 to 10 pints sauce.
