Baked Chicken Casserole
3/4 cup diced celery
1 small onion, minced
3 cups soft bread cubes, about 1/2-inch
1/3 cup butter
1 egg, well beaten
3/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1/4 teaspoon baking powder
2 to 3 cups diced cooked chicken
1 can cream of mushroom soup
1 cup buttered coarse bread crumbs
Saute celery, onion and bread cubes in butter. Turn into a bowl and add egg mixed with milk, seasonings and baking powder. Toss gently. Place chicken in buttered 7x11x1-inch baking dish. Cover with first mixture. Spoon soup over all and top with bread crumbs.
Bake at 350° F. for 30 minutes.
