    4 cups all-purpose flour
    2 tsp. salt
    1 cup cold shortening
    1/2 cup cold butter
    10 tablespoons cold water
    20 fresh peaches, sliced
    1 cup sugar
    1 tsp. fresh fruit
    Vanilla to taste
    2 cups sugar
    1/2 cup butter
    2 cups water
    1/2 cup butter, melted

    Mix flour, salt, shortening, and cold butter together with a pastry blender, until well blended. Add the 10 T. cold water to well blended flour mixture; mix all together with a fork until it slightly comes together into a ball. Divide the dough into thirds. Roll one-thirdof the dough on a lightly floured surface with a rolling pin, large enough to place sheet of dough into a large oblong baking dish, pushing the dough up the sides. Place 1/2 the peaches across the dough.

    Roll one-third of the dough on lightly floured surface with rolling pin, large enough to place the sheet of dough onto the layer of peaches. Place the last one-third of the dough on lightly floured surface and place the sheet of dough over the top of the peach layer.

    In a large saucepan, heat the 2 cups sugar, 1/2 cup butter and 2 cups of water over medium heat until butter melts. Pour over the layers in the baking dish. With a sharp knife, cut all the way through the cobbler diagonally across to the other side of the dish in strips. Turn and cut in the opposite direction diagonally across the dish. Sprinkle with coarse sugar and bake for 1 1/2 hours.

    Note: The lady that gave this recipe says she adds 1/2 cup sugar across the peach layers, because the like it sweeter.
