    Italian Cabbage Rolls

    1 pound ground pork
    1 pound lean ground beef
    1/2 cup each: 3/8" diced onion, green pepper and celery
    1 tablespoon minced garlic
    1 tablespoon each: dried basil and oregano
    1/4 cup tomato juice
    2 cups cooked rice
    1-2 teaspoons salt
    1/2 teaspoon black pepper
    1 head Savoy cabbage
    Water
    1 cup tomato juice
    3 medium diced tomatoes

    Combine together in a large bowl, the ground pork, beef, onion, green pepper, celery, garlic, dried basil, oregano, 1/4 cup tomato juice, rice, salt and pepper. Form into 16 balls.

    Blanch outer leaves from Savoy cabbage in boiling water. Refresh in cold water; pat dry. Place 1 meatball on bottom of each cabbage leaf. Fold over sides and roll up tightly. Repeat with remaining meatballs.

    Place in a greased casserole. Top with 1 cup tomato juice and diced tomatoes. Cover and bake at 350° F. for 30 minutes. Remove cover and bake for 30 minutes longer.

    Serves 8
