    Sweet and Sour Pork

    2 pounds boneless pork -- cut in 1/2-inch
    cubes
    4 tablespoons cornstarch
    2 tablespoons dry sherry
    4 tablespoons soy sauce
    2 cups vegetable oil
    2 large onions -- cut in 6 wedges
    4 green peppers -- cut in strips
    1 carrot -- thinly sliced
    1/2 cup water chestnuts -- diced
    3/4 cup canned pineapple chunks
    1/2 cup sugar
    1/3 cup ketchup
    3 tablespoons cider vinegar
    2 tablespoons dry sherry
    4 tablespoons soy sauce
    3/4 cup water
    4 tablespoons cornstarch

    Toss the pork cubes in a mixture of 4 tbsp. cornstarch, 2 tbsp. dry sherry and 4 tbsp. soy sauce. Heat the vegetable oil in a skillet; fry the pork until its browned on all sides and tender. Drain the pork and keep hot; pour off all but 1/4 cup oil.
    In the oil remaining in the skillet, saute onions, green peppers and carrot, for 3 minutes. Add the water chestnuts and pineapple chunks; cook 2 minutes. Mix together the sugar, ketchup, cider vinegar, dry sherry and soy sauce. Add to the skillet and bring to a boil. Stir in the water mixed with the 4 tbsp. cornstarch. Cook, stirring constantly, until thickened. Add the pork, mix well; heat thru and serve.

    Serves 6
