Brunch Fruit Cup
3 ounces pkg. lemon gelatin
2 cups boiling water
6 ounces can frozen orange juice concentrate, thawe
20 ounces can pineapple chunks in heavy syrup, undra
11 ounces can mandarin oranges -- undrained
1 banana -- sliced (or more if you want)
In large bowl, dissolve gelatin in boiling water. Stir in orange juice.
Stir in remaining ingredients, except banana.
Cover and refrigerate for several hours or overnight. Just before serving, add banana.
10 (1/2 cup) servings.
TIPS: *Green or red seedless grapes, pears or other fresh fruits in season
can be substituted or added in addition to the bananas.
