TWICE BAKED APPLES
36 Golden Delicious apples, size medium
1 1/2 c. honey
1 c. apple juice
1 tsp cinnamon, ground
1/2 tsp nutmeg, ground
1/4 tsp salt
1 cup golden raisins
3 quarts vanilla ice cream
3 cups toasted and chopped nuts (walnuts, pecans or sugared pecans)
24 pirouettes cookies
Heat oven to 350 F. Prepare apples: remove cores and one ich of peel from tops of 24 apples; peel, core and chop remaining 12 apples.
Spread chopped apples in pans and arrange 24 cored apples over them. Pour honey and juice over apples. Bake, uncovered, 45 minutes or until done.
With a spoon, carefully remove flesh from the whole baked apples, leaving a 1/4-inch wall.
Place apple flesh with the juices in a food processor. Add seasonings, process leaving some apple chunks; stir in raisins; keep warm.
At service, place an "apple shell" on plate; spoon warm apple mixture into it. Place ice cream next to apple; sprinkle with 2 tablespoons nuts; garnish with cookie. Individual serving: 1 filled apple shell, 1/2 cup ice cream, 2 tbsp. nuts, 1 cookie
