Pimiento Jam
3 jars (7-oz. each) pimientos
2-1/4 cup sugar
1-1/2 cups white vinegar
3 tablespoons grated lemon zest
1/8 teaspoon hot pepper sauce
Drain pimientos well and mince finely. Mix with remaining ingredients and cook, stirring until sugar is dissolved. Simmer, stirring occasionally, until mixture is of jam consistency, about 20 minutes. Pour into sterilized jelly glasses and seal.
