    Easy Swiss Steak

    Amount Measure Ingredient -- Preparation Method

    1/4 cup all-purpose flour
    1/2 teaspoon salt
    1/2 teaspoon lemon-pepper
    1 1/4 pounds cube steak -- cut into strips
    Vegetable oil
    1 large onion -- cut in half and
    thinly sliced
    1 green bell pepper -- cut into 1-inch
    pieces
    2 cans tomato juice (11.5 oz.)
    Hot cooked rice

    Combine first 3 ingredients. Dredge steak in flour mixture. Pour oil to a depth of 1-inch into a large heavy skillet. Cook steak in hot oil, in batches, over medium-high heat 1 to 2 minutes on each side or until golden. Remove meat from skillet, and set aside; reserve 1 teaspoon oil in skillet.

    Add onion and bell pepper, and saute in hot oil until tender. Stir in tomato juice, and bring mixture to a boil. Cover, reduce heat, and simmer 30 minutes. Add the steak, and cook 10 minutes. Serve with hot cooked rice.

    Yields: 4 servings
