Mama's Best Meatloaf

3/4 pound ground chuck
1/4 pound bulk pork sausage
2 cups cooked rice
1 teaspoon salt
1/2 teaspoon onion salt
1 tablespoon parsley -- chopped
1 cup chopped celery
1 large carrot -- grated
1/4 cup milk
1/4 cup flour
1/2 teaspoon salt
1 teaspoon paprika
2 tablespoons vegetable oil
1/4 cup tomato juice
3 large onions -- quartered
Combine first 9 ingredients; shape into a loaf. Mix together flour, salt and paprika. Coat meat with flour mixture. Heat oil in large skillet; brown loaf lightly, turning once. Add tomato juice and onion. Cover and bake at 350 F. for 1 hour. Lift loaf to heated platter, surround with onions and pan juices.
Serves 6

NOTES : My Mother would always brown her meatloaf.....it keeps the loaf moist and its so flavorful.
