Baked Baby Beef Liver and Onions

1 1/2 pounds baby beef liver
Bacon fat
4 slices crisp bacon -- finely crumbled
seasoned flour
6 medium onions -- sliced thin
1/2 cup hot water
Fry bacon; drain and crumble, set aside.
Dredge liver with seasoned flour. Saute in hot bacon fat until slightly browned. Place in greased baking dish. Cover with onions. Season with salt and pepper; sprinkle with the bacon. Add hot water; cover. Bake at 350 F. for 30-40 minutes, adding more water, if necessary. Remove cover the last 10 minutes of cooking.

NOTES : We love liver and onions and this is the way I fix ours now. Its so tender and delicious!
