    Cajun Pork Roast

    2 pound boneless pork roast (split roast in half, if desired)
    3 tablespoons paprika
    1/2 teaspoon red pepper
    1 tablespoon garlic powder
    2 teaspoons oregano
    2 teaspoons thyme
    1/2 teaspoon salt
    1/2 teaspoon ground white pepper
    1/2 teaspoon cumin
    1/4 teaspoon nutmeg

    Combine all seasonings and rub well over all surfaces of roast. Roast in a 350° F. for about 40 minutes or until inserted thermometer reaches 150° F. ( Can also grill over medium-hot coals, turning occasionally, for 15-20 minutes, until inserted thermometer reads 150° F. ) Pork is done when there is still a hint of pink in the center.

    Let it rest for 10 minutes before slicing and serve in sandwich buns with Creole mustard, mayonnaise or horseradish sauce.

    Serves 6
