    Italian Beef Short Ribs

    4 pounds beef short ribs, cut into serving pieces
    2 medium onions, cut into 1-inch wedges (2 cups)
    1 package (8-ounce) fresh whole mushrooms, cut in half
    1 jar (14-ounce) tomato pasta sauce (any variety)

    Heat oven to 350° F. Place ribs and onions in ungreased 13x9-inch (3-quart) glass baking dish. Cover and bake 1 hour. Drain off fat. (Don't skip this part...short ribs can be very fatty, and baking them first cooks off all that fat.)

    Add mushrooms to ribs and onions in dish. Pour pasta sauce over all. Cover tightly with foil and bake about 1 hour 30 minutes longer or until beef is tender. If desired, skim off and discard any excess fat from top.

    Makes 6 servings
