Italian Sausages

2 tablespoons olive oil
1 1/2 pounds sweet or hot Italian sausage
1 clove garlic -- minced fine
1 onion -- cut in chunks
1 cup celery -- sliced
1 green pepper -- sliced
1 large apple -- peeled and sliced
1 can Campbell's Italian Tomato soup -- undiluted
1 1/2 cups beef broth
2 tablespoons cornstarch
5 tablespoons cold water
1 teaspoon pepper
2 tablespoons soy sauce
Heat olive oil in a large deep skillet over high heat. Add sausages. Reduce heat. Cook 10 minutes, turning sausage over 2 to 3 times during cooking. Add garlic, onion, celery, green pepper, apple and soup. Continue cooking, partially covered, another 15 minutes. Remove sausages from pan. Set aside.
Increase heat. Stir in beef broth. Cook another 2 minutes. Mix cornstarch with cold water and add pepper. Stir into sauce. Add soy sauce. Simmer until slightly thickened. Return sausages to skillet and heat thru.
