1/2 medium onion -- finely chopped
2 eggs
1/4 cup water
1/2 cup rolled oats
1 tablespoon prepared spicy mustard
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 pounds lean ground beef
***MEATBALL GRAVY***
meatball drippings
2 cups beef broth
2 teaspoons prepared mustard
1 1/2 teaspoons ground nutmeg
1/2 teaspoon sauce and broth concentrate
or
1/2 teaspoon Worcestershire sauce -- and
1/4 teaspoon pepper
2 tablespoons cornstarch
In a mixing bowl, combine the onion, eggs, water, oats, mustard, nutmeg, salt and pepper. Add the ground beef and mix well. Shape the meat mixture into 16 large meatballs (about 1/3 cup each). Place shaped meatballs in a shallow baking pan. Bake, uncovered, in a 350ø oven for 25 minutes or till no pink remains. Remove the meatballs, reserving the drippings, if you like. Using meatball drippings, prepare the Meatball Gravy. Serve the meatballs warm, topped with gravy. Makes 8 servings. MEATBALL GRAVY: In a heavy medium saucepan, combine the meatball drippings with 2 cups beef broth, 2 teaspoons prepared mustard, 11/2 teaspoons ground nutmeg, 1/2 teaspoon sauce and broth concentrate or Worcestershire sauce and 1/4 teaspoon pepper, stirring till combined. Stir in 2 tablespoons cornstarch. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes more. Makes 2 cups.
