Lunar Pork
1-1/2 pound lean pork tenderloin
1 crushed clove garlic
2 teaspoons minced ginger
2 tablespoons soy sauce
1 tablespoon sherry
1 teaspoon Hoisin sauce
1 teaspoon sesame oil
2 teaspoons sugar
Dash of cinnamon
1 tablespoon vegetable oil
1 tablespoon honey
3 drops red food color (optional)
Marinate pork tenderloin with a mixture of crushed garlic, minced ginger, soy sauce, sherry, Hoisin sauce, sesame oil, sugar and cinnamon. Brush mixture on pork, turning to coat well. Marinate for 2 hours or refrigerate overnight.
Preheat oven to 350° F. Place pork on rack in baking pan. Reserve marinade. Add vegetable oil, 1 tablespoon honey, and red food coloring, if using to marinade. Roast pork for 40 minutes. Turn pork over and baste generously with honey marinade.
Increase oven to 450° F. and continue roasting for 10 minutes. Rest for 5 minutes. Slice into 1/4" thick slices.
Serve with rice or wonton soup.
