Pork Chops with Apples

8 loin pork chops
1 Dash salt and pepper
1/2 cup apple juice or cider
3 tablespoons catsup
1/2 cup soy sauce
1/2 cup brown sugar
2 tablespoons cornstarch
1/2 teaspoon ground ginger
2 apples -- cored
Sprinkle pork chops with salt and pepper; bake in a single layer in roasting pan at 350 F. for 30 minutes, uncovered. Turn chops over. Combine juice, catsup, soy sauce, brown sugar, cornstarch and ginger; cook over medium heat until thickened. Spoon some juice from roasting pan into sauce to thin. Core apples and cut in rings. Place one ring on each chop; pour sauce over all. Bake 30 minutes longer, basting several times.
Great served with hot buttered rice and broccoli.

NOTES : *I like to use Golden Delicious apples (cut into rings).
