4 pounds pork loin
4 cloves garlic -- slivered
2 sprigs fresh rosemary or 1 teaspoon dried
rosemary
Salt and pepper to taste
Make several incisions in pork, and insert garlic slivers into cut. Rub meat with garlic and rosemary; sprinkle with salt and pepper. Roast in an uncovered roasting pan in a hot 450 F. oven 10-15 minutes. Reduce heat to 350 F. and roast 1-1/2 to 1-3/4 hours, basting frequently with pan drippings.
Be sure pork is well done, and the juice is not pink. Remove pork from oven; cool to room temperature, slice and serve with potatoes and a vegetable.
