    Swiss Steak

    This popular steak dish can be baked in the oven or simmered on top of the stove, whichever you choose.

    2 pounds round steak
    1/3 cup flour
    Salt and pepper to taste
    3 tablespoons shortening
    1/2 green pepper
    1 onion
    1 No. 2-1/2 can tomatoes

    Dredge the steak in flour seasoned with salt and pepper. Melt the shortening in a frying pan, and brown meat quickly on both sides. Remove steak from the pan and place in a roasting pan. Chop the green pepper, onion and tomatoes and pour with tomato juice from the can over the steak.

    Bake 1 hour at 300° F. to 350° F. with a tight lid on the roasting pan. (You may simmer this dish on top of the stove in same pan used to brown the meat. Cover tightly and simmer on low heat for 1 to 1-1/2 hours.)

    Serves 4-6
