Greek Pita Pizza
1 red pepper, cut in 1/2" strips
1 red onion, cut into 1/2" sections
4 large fresh mushrooms, sliced
Marinade:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons minced garlic
2 teaspoons crushed black pepper
1 teaspoon salt
1 avocado, peeled and cut into 1/4" slices
2 teaspoons lemon juice
1 teaspoon fresh oregano
4 Greek pitas
Olive oil
Fresh rosemary
Crumbled feta cheese
Combine marinade ingredients, olive oil, balsamic vinegar, minced garlic, black pepper, and salt. Marinate vegetables. Cut 1 peeled avocado into slices. Sprinkle with lemon juice and fresh oregano.
On medium, grill veggies for 3 minutes and avocado slices for 2 minutes. Brush one side of 4 Greek pitas with olive oil. Grill on oiled side for 1 minute. Turn off grill. Top each pita with 1 teaspoon fresh rosemary, grilled veggies and avocado and 2 tablespoons crumbled feta cheese. Close lid and allow pizzas to warm for 5 minutes.
Serve at once.
