Chinese Chicken and Walnuts
2 boneless skinless chicken breasts
3 tablespoons peanut oil
1 tablespoon butter or margarine
3/4 cup broken walnuts
2 tablespoons soy sauce
1 tablespoon lemon juice
Cooked rice (optional)
Cut chicken into bite-size pieces. Heat oil in 10-inch skillet over medium heat until sizzling hot. Add chicken and quickly stir until it begins to brown. Add butter and nuts. Continue to cook, stirring often. Turn off heat; add soy sauce and lemon juice.
Stir so all of the chicken is well coated with the sauce. Serve with steamed rice, and veggies.
