Grandma's Southern Fried Chicken

1 chicken -- cut up
1 1/2 cups flour
Salt and pepper to taste
Garlic salt -- if desired
Shortening or oil
Cut chicken into pieces; rinse well under cold water and pat dry. Combine flour with seasonings. Place seasoned flour in a sack; drop in chicken pieces and shake to coat well. Lay on waxed paper for alittle bit, and then flour again. Place in skillet, in hot shortening or oil, about 3/4-inches deep. Sprinkle with additional salt, pepper and garlic salt, if desired. Brown slowly until crisp; turn pieces and season other sides.
Cook until crisp and golden brown, and done.

NOTES : This is the recipe my Mother used, except for the addition of garlic salt. It was my Grandma Jackson's recipe and she was from Hub, Mississippi. My Mom was famous in our family for her fried chicken.....no one could make it better than her!
