Lemon Chicken Paillard
2 (6-ounce) boneless skinless chicken breasts
Pinch of salt, pepper and dried basil
Flour for dusting
1 tablespoon olive oil
2 tablespoons butter
1/4 cup chopped green onion
1 teaspoon chopped fresh parsley
2 tablespoons lemon juice
Between 2 sheets of plastic wrap, flatten the 2 chicken breasts to double their size. Season chicken with a pinch of salt, pepper and dried basil. Dust chicken with flour, patting firmly on both sides.
On medium heat in olive oil in a large non-stick frying pan, saute chicken to a golden brown on both sides.
Keep warm. Wipe pan clean. Melt butter in pan. Add green onions and parsley. As the butter starts to brown, add lemon juice. Stir ingredients and pour over warm chicken. Serve with rice or noodles.
